Happy Cinco de Mayo!

Lemon Bread

This bread is so delicious.  My mom used to make it all the time when my sister and I were growing up.  It was the go-to gift for all of our elementary school teachers!  I haven't had it in probably fifteen years and it was even better then I remember.  The first loaf was eaten yesterday in a matter of minutes, and the second was whisked away to work with my mother.  Needless to say I have no picture :(  I will add one in the next week or so when I make another loaf!  But trust me picture or no picture, you must try this bread!!

3 cups flour
2 cups sugar
1 cup butter, softened
1 cup milk
2 teaspoons baking powder
2 lemons, zested and juiced
4 eggs
1/2 teaspoon salt
1/2 cup sugar

Pre-heat oven to 350 degrees.  Grease and flour 2 loaf pans.  Mine are pyrex, 8.5 X 4.5 X 2.5. 

In stand mixer cream together butter and 2 cups sugar.  Add in eggs one at a time, mixing after each addition.  In separate bowl combine flour, baking powder and salt.  Add into wet mixture alternating with the milk.  Mix in lemon zest. 

Divide batter between two pans.  Bake for 60 minutes.

While baking mix together 1/2 cup sugar and the lemon juice.  Set aside.

Remove from oven.  Using a fork poke each loaf about twenty times.  Pour half of the lemon juice mixture onto the loaf and use remainder for second loaf. 

Allow to soak into bread for about 10 minutes.  Remove from pan and serve!
